I accidentally took a five-hour nap this afternoon cause I was feeling anxious for some reason and then I woke up at 10pm. It sucks, cause now I'm unable to sleep.
I did, however, get to attempt making a stir-fry using some noodles recommended by my ever-so-fabulous bestie over at Betty Says (she's still alive, but doesn't blog anymore sadly).
For those of you that don't know, which is all of you, I've recently been attempting to teach myself to cook. I began working mainly with pasta dishes and learned to make sauces from scratch, but have upgraded to stir-fry since I find that harder for some reason. 🤷🏽♂️
Today, I got to work with rice noodles, though.
I'm actually rather proud of my use of vegetables lol
It wasn't a specific recipe, but it still came out fucking delicious.
Now, I eyeballed everything for this; it was pretty easy since it's stir-fry and not particularly hard, unless you're me. So I'm giving the methods, but not the measurements cause I don't have them.
Ingredients:
- Broccoli
- Mushrooms
- Green Beans
- Rice Noodles
- Soy Sauce
- Garlic (around four cloves)
- Salted Butter (you can sub this with some earth balance if you wanna do vegan!)
You basically just cute everything up: slice up your mushrooms (or buy them pre-sliced like I usually do), cut up the broccoli, and cut the green beans in half (I found it makes them somewhat easier to eat lol).
You set a pot to boil and once the its boiling, turn it off and dunk in the rice noodles. Leave me there for around ten minutes. But don't forget about them! Make sure to strain them and cut them if you feel the length might be an issue. (I did, but I'm also a mess with the cutting, omg). Set them aside.
Put a sauce pan or a wok (if you're fancy) on low heat and add two pats of butter. Let them melt. Then, increase the heat and crush two cloves of garlic and sautee them a bit.
These are the vegetables I used; this gave me enough for about two people.
Once that happens, throw in your vegetables! I put both the broccoli and the green beans in at the same time since they would take a big longer to cook. Afterwards, I had to add an extra pat of butter and crushed some more garlic before throwing in the mushrooms, but it was all cute. It worked.
I sautéed them for about twenty minutes, just cause I like them soft af. During this time, of course, I was running around trying to get the noodles together. 🤣
Once they're cooked to your liking, throw your noodles in there too, and splash on the soy sauce. (Now, this is obviously to taste, but I had to throw some on there like twice when it was cooking and twice more after it was done). Toss the noodles around with some tongs for best effect. I had none, so I had to make due with what as at hand, using a fork and a spoon, which is how I ended up with rice noodles covering my stove. #Yolo
Once they're cooked to your liking, serve and enjoy.
Tbh, I know it's a basic dish and most people already know how to make it, but I've noticed that people take cooking knowledge as granted. I didn't even know how to work with this until I tried it, and I would've never tried this a year ago for fear of fucking it up. So it can help anyone who was in my same boat, I'm glad to contribute. ☺️
